Monday on CBC News at Six
Meet two women working to make sure every homeless person in Winnipeg has warm feet this winter.

PENNY'S CAKE

1 1/2 c. boiling water
1 c. oatmeal

Combine the above ingredients and let stand for 15 mins.

1/2 c. margarine
2 eggs
1 c. brown sugar
1 1/2c. flour
1 c. white sugar
1 tsp. soda
1 tsp. vanilla

Method:

Cream margarine and sugars. Add eggs and beat. Then stir in the oatmeal. Add
the dry ingredients and vanilla.
Bake at 350 for 30 - 35 minutes in a 9 x 13 pan.

When cake has cooled, spread with this topping:

1/4 c. brown sugar
1/2 c. margarine
1/2 c. white sugar
1/2 c. coconut
1/2 c. chopped nuts (optional)
1/4 c. milk

Heat until bubbly. Spread on cake. Broil 2 - 3 minutes. (Sometimes I double the topping)
