    Salmon with barley & brussels sprouts became pan-roasted salmon with brown butter barley and crispy brussels sprouts. Rapini & grits became corn grits with rapini, chili, garlic and pecorino. And just like a restaurant, I found sales increasing.

    About a year ago I started offering a paid fitness membership to anyone interested. Not everyone goes for it but I’ve seen it make a really positive difference in some cases. There are some great rates available.

    I’ve argued this for years. Same as movie theatres. For a long time our Saturday brunch was $1 cheaper than Sunday. Patio pricing should also be higher than inside really...

    For over 30 years, we’ve accepted demand-based pricing from airlines & hotels. We don't really question that it costs more to book at peak-times & less at off-times. Can this model work for the restaurant industry?

    Y'know how it's hard to get a restaurant reservation for this Friday at 7:30? That's because everyone wants to book at the same time. Would you pay a little extra for it? Would you book on a Wednesday for a lower rate?
